Melgar's salchichón is a type of pork sausage meat with some elements of fat. Its seasoned with salt, paprika, nutmeg, cloves and coriander and allowed to sit in the sauce for 24 hour.
The Iberian salchichón is very similar to other salchichón only that is processed with Iberian pork and added black pepper, salt and oregano.
Its then left to dry naturally.
