Semi seasoned cheese processed goat milk of a Payoya goat, a native goat Cadiz''s mountains, now protected as endangered. This cheese is then a product with limited production, the light color is creamy and slightly sour, but very tasty. It is aged totally with natural extra virgin olive oil for a period ranging from two to four months. It can match with mixed chorizo, with tomato jam or with the original sugar cane honey.
